Spinach Salad

    Hello my dear friends,
    Summer is here… all we need is light, cold, fresh and tasty dishes…
    Try this one…

    ½ package (6 oz.) any Pasta you like
    2 cups torn fresh spinach
    1 cup grape or cherry tomatoes, halves
    ¼ cup sliced green onion
    ¼ cup light olive oil
    2 tablespoons lemon juice
    1 teaspoon Dijon-style mustard
    2 cloves garlic, finely chopped
    ½ teaspoon salt
    ½ teaspoon sugar
    Toasted pine nuts, optional
     
    Cook pasta.
    In large bowl, combine pasta, spinach, tomatoes and green onions.
    In small bowl, combine all remaining ingredients except pine nuts, mix well.
    Pour dressing over spinach mixture, toss well.
    Top with pine nuts if desired.
    Serve immediately.
