Passover trail mix (Pareve)

Did you Know?
The name "Pesach", meaning to pass through, to pass over, to exempt or to spare. It refers to the fact that G-d "passed over" the houses of the Jews when he was slaying the firstborn of Egypt. In English, the holiday is known as Passover. "Pesach" is also the name of the sacrificial offering (a lamb) that was made in the Temple on this holiday. The holiday is also referred to as Chag he-Aviv , (the Spring Festival), Chag ha-Matzot , (the Festival of Matzahs), and Z'man Cheiruteinu , ….the Time of Our Freedom ..
I called my sweet little cooking adviser Gloria Schwartz to ask for help with Passover/Pesach recipes…
I thought that this is the time for familiy recipes built on traditions..
That's how I grew up..I was always a guest of my mother and mother in law for the Seder.. and they always said not to bring anything except an Israeli salad….
So, here Gloria offers us a real treat for the next morning….. we need it too ! after a whole working week, don't it?
7 matzahs
½ cup shredded coconut
½ cup carrots, shredded
1 small apple, unpeeled, cored, quartered, and thinly sliced crosswise
1 pear, thinly sliced
1 ½ tsp. cinnamon
¾ cup warm orange juice
1 Tbl. salad oil
¼ cup honey
4 Tbl. apple juice concentrate (from a thawed can of frozen apple juice)
½ cup sliced almonds
8 oz. dried mixed fruits, cut into bite-sized pieces
Preheat oven to 250F.
In a large bowl, break-up the matzahs into small pieces slightly larger than farfel (about 1/2 inch). Combine the matzahs with the coconut, apples, cinnamon and pear.
In a small bowl, combine the warm orange juice, oil, honey and apple juice concentrate. Stir until the honey is blended in. Drizzle over the matzah mixture and mix well. Let the mixture sit 2-3 minutes to absorb some of the liquid, then mix again.
Spread the mixture onto two non-stick baking sheets and bake 1 ½ hours, stirring mixture every 30 minutes. (Mixture will still be very moist after the first 30 minutes.)
Add the almonds during the last 20 minutes. Remove from oven and cool the mixture. Transfer to a large bowl, and mix in the dried fruit.
Store in a plastic covered container. It is great as a cereal with milk or yogurt in the morning. It is also a great nosh by itself. Yield: 9 cups.
