Last weekend Roey and I had a wonderful “Seudat Purim” (Purim Meal) at the Shkop family
It was such a happy party… guests came in and out wearing costumes, singing and dancing around our table….
The Shkop family has 7 kids, 4 of them live in Chicago, and I was pleased to sit next to their beautiful daughter, the lovely Bluma who made two of the best salads I ever ate….
Avocado/Hearts Salad
2 Avocados – cut into cubes
2 Cans Hearts of Palm– cut into cubes
1 Box cherry Tomatoes –washed and cut in half
Mix the salad ingredients in a bowl.
Dressing
1 tsp fresh dill - chopped
3 Tbs. olive oil
3 Tbs. red wine vinegar
3 Tsp. sugar – or substitute
½ Tbs. salt
Mix the dressing ingredients in a jar with a tight lid and mix well. Can be prepared in advance. Dress the salad at the last moment.
Lettuce/Pepper Salad
1 whole head of Romaine Lettuce – washed well and then chopped into small pieces
½ Green Pepper – remove the veins and chop into small pieces
½ Red Pepper – remove the veins and chop into small pieces
½ Yellow Pepper – remove the veins and chop into small pieces
1 bag Terra Chips (Vegetable Chips) – crushed
Roasted Blanched Silvered Almonds - to taste (about ¼ cup)
Mix the salad ingredients in a large bowl. Can be prepared separately and chilled until ready to eat. Don’t add the chips until ready to serve.
Dressing
1/3 Cup salad oil
1/3 Cup red wine vinegar
¼ Cup Sugar
½ - 1 white onion –grated
3 Tbs. Ketchup
Mix the dressing in a jar with a tight lid and shake well. Can be prepared in advance and dress the salad when ready to eat.
