Apricot Pineapple Noodle Kugel

    My kind friend Helen introduced me to this kugel at the break fast meal. I didn’t forget it. Lately I reminded her that I’m still waiting for the recipe and here it is. Thank you Helen!

    Noodles
    1 16 –Ounce package medium noodles
    1 stick margarine or butter
    1 cup sugar
    6 eggs. Well beaten
    2 cups non-dairy creamer, dairy creamer or soy milk
    2 cups apricot juice
    ½ teaspoon vanilla
    1 large can crushed pineapple, drained
    Topping
    1 1/3 cups corn flake, crumbs
    1 stick margarine  or butter
    ½ cup sugar
    Preheat oven to 325 degrees.
    Noodles
    Cook noodles according to package directions. Drain. Add all other ingredients to the noodles. Put in a large baking dish.
    Topping
    Mix corn flake crumbs, margarine or butter and sugar. Sprinkle on top of kugel.
    Bake for 1 hour or longer.
    Serves: 8
