Bogi's Apple-Honey Challah

Ingredients:
5 cups flour
1/3 cup honey
2.5 tsp. yeast
Half teaspoon salt
1/4 cup sunflower oil
2/3 cup water
1 egg
1 egg-yolk
1 big apple
1 teaspoon sugar
Steps:
1. Pour warm water (not hot! just warm) into a large bowl and put a teaspoon of sugar into it, stir it until the sugar dissolves. Then sprinkle the yeast over the warm water. Wait until the yeast dissolves (approximately 5 min).
2. Add the flour and the salt to the mix, and stir it a little.
3. Add the egg, the honey, the oil and the water. Mix it first with a spoon, then it's the best to use a hand mixer with dough hooks.
4. Wash the apple, peel it then grate it into the bowl (on top of the dough). Once the whole apple is grated into the bowl, knead the dough for approximately 5 min. until the texture of the dough gets smooth and elastic (it's the best when it's a little bit sticky).
5. Put a little bit of oil on your hands and cover the top of the dough with it.
6. Cover the dough with a damp clean cloth and let rise for 1- 1.5 hours or until it has doubled in bulk.
7. Punch down the risen dough and turn out onto a floured board. Either you can make one big challah or two middle sized ones.
8. Preheat the oven for 180 degree.
9. Put baking paper in an oven pan. Put the challah on it. Beat the egg-yolk and brush a generous amount over the braid/braids.
10. Bake it until it turns golden brown. Once it is golden brown cover it with tinfoil and bake it for 10 more minutes than your special apple-honey challah is ready.
